How many times have you gotten to the end of your bread, only to have a few bent and somewhat stale pieces left in the bag?
Instead of throwing these away, place them in the freezer until you have several. Then, while they are frozen, grate them on the large holes of a box or straight grater. Voila, bread crumbs!
You can add some herbs or spices to the crumbs for extra flavor. These bread crumbs can be used right away, or can be toasted in the oven and saved in a jar for later use. And even better? They are similar to panko bread crumbs, which are excellent for perfectly crisp baking.
If you don’t have time to bake the crumbs or use them immediately, store them shaved in the freezer. These can be added frozen to a meatloaf or meatball mixture at a later time.

It’s a good idea, though frankly, I hardly ever use bread crumbs in my cooking. What we do is we freeze and save up for a French toast fry up. Slightly stale bread is actually better for that than fresh bread.

I love that idea, Anne! My daughter saw a show that had people making french toast in it. She asked for me to make some – funny, I realized she has never had it before. She loved it – so now I have another use for the “end of the bread.”

I use an end piece of bread, before it gets stale, to keep the brown sugar moist. When there are only a slice or two left and they are going stale I cube them up and then put them in the freezer. That way I have bread for stuffing and if they need to be turned into bread crumbs they can be ground up in the blender or just take a mallet to the bag to break them up.

I find that if you keep the bread in the freezer the whole time you can just thaw what you need each time and there is less left-overs but we don’t really eat a lot of bread I guess.
